You'd have to watch EVO SMP to understand better or read some info on Wiki about them, but basically, they watch over people but don't show themselves. In the EVO SMP, they would give the players things to do and punish them if they didn't cooperate. Grian got canonically turned into onr of them when he left that Server. They talked in the chat after the players beat the Ender Dragon. There is a theory saying that they are the viewers, and since Grian stopped playing, he became a Watcher(viewer) instead. It's a whole thing, the lore itself is pretty interesting
