Sup Greg, wow I've never seen such beautiful beef ribs😳, we used to butcher a lot, even buy half slabs(half cow), almost tripled price, barely worth it anymore, but love that Argentinan grill, had a line on Santa Maria grill figured best both worlds but isn't safe to start over again.. anyway looks amazing, look how much beef on a rib, outstanding. Being able to cook such huge, thick, dense pieces of meat successfully over live fire is truly impressive. The more I see you doing stuff like this on the Sunterra Argentine grill, the more I think I might just replace my offset with a Sunterra and go to town!
I don't like ordering off these online meat packing sites. They're more expensive, especially when you add shipping. I like to buy 4 bone. Not 3 bone. I like prime cut. And even tho I like dry aged, I want my beef ribs not dry aged. I can buy my Dino ribs from HEB and Cosco cheaper. And still get them prime cut. Awesome video. That's definitely a different way to cook beef ribs. Beef ribs are the best bite in bbq. One thing that got me also was when you flipped the ribs. Maybe it's different because of the style of grill your using. But cooking with the bone down, the fat renders into the meat. Which gives it more flavor and juicy. But your ribs were definitely juicy anyway. Hreat job! You got me wanting to smoke ribs now. Lol. On another note, I watched a guy, I think it was Kendrick BBQ, smoke a 12 bone, 34 lbs of plate ribs on the smoker. I thought, I want to try to do that one time. Lol.

Great cook on a beautiful cooker! I notice some rust on the grease collectors. Is it this only place rust has developed? I'm thinking of buying one and hesitating if I should go stainless steel. Keep up the incredible work!
A lot of pepper and some salt. Doing it again ...... would you change anything regarding the seasoning to make these even better? I'm a customer of Porter Road and can attest to their quality.
I was raised on a ranch and we ate our own beef. The animal we ate had three bad days. The day it was castrated. The day it was vaccinated. And the day it was slaughtered. The rest of it's life was being a happy critter on the farm growing up with it's mother and extended family. I do almost all my outside cooking on my Argentine grill. Smoke rings are overrated and too smokey for me.

What do you have against salt? You hardly use it on anything. Nice sharp knife!

I've done plenty of videos adding more flavors, including homemade red chimichurri. I wanted to keep this "traditional" Central Texas flavors.
