Gingerbread Cookies. Icing for gingerbread

- Ingredients:
gingerbread Dough:
1. sugar-400 g;
2. boiling water-160 ml;
3. butter-160 g;
4. soda-1 tsp;
5. salt-half tsp;
6. ginger - 3 tsp;
7. cinnamon - 3 tsp;
8. flour-700 g;
9. egg - 1 PC.
The icing:
1. egg white - 3 pieces;
2. powdered sugar-700 g;
3. lemon juice - 1 tbsp;
4. dyes-optional.
How to cook:
1. pour the sugar into a saucepan with a thick bottom and melt over low heat;
2. as soon as the sugar begins to melt, gently start stirring it;
3. when the sugar melts completely pour in small portions of boiling water and actively stir;
4. add the butter;
5. as soon as the oil is dissolved, add baking soda, salt, ginger and cinnamon and continue to stir until completely dissolved;
6. when the mass cools down, add the egg and mix well;
7. add one spoonful of flour and knead the dough ( as soon as it becomes difficult to pour out the dough with a spatula, transfer it to the Mat and knead it with your hands);
8. the finished dough is wrapped in a film and sent to the refrigerator overnight;
9. after a night, we take out the dough and divide it into three parts;
10. each part is rolled out with a thickness of about 3 mm., and cut out the figures;
11. bake for 7-8 minutes at 180 degrees;
12. ready-made gingerbread is allowed to cool down;
13. decorate with icing ( add powdered sugar to the whites and mix with a whisk, then beat with a mixer for 5 minutes, add lemon juice and beat again for a couple of minutes, icing is ready)! If desired, you can add dyes.
14. Done.
