The things is: most of them know NOTHING about ground fighting. There's tons os videos out there with people having the chance to submit their opponents and they don't know how to do it.

Exactly! There isn't magic bullet. Head butts, eye pokes, etc are only small part of the whole fight. MMA covers most.
