  • Today I'm sharing how I can pickles in my country kitchen. Always check with your local extension office for home preserving methods that are best for your altitude. I've canned pickles this way for nearly 25 years and we all love them. The key to a crunchy pickles is to always use the freshest cucumbers and pick them when they're small if possible.
    MY COUNTRY KITCHEN DILL PICKLES
    For each quart jar:
    Place one garlic clove in jar, pack tightly with baby cucumbers, fold up and cram in 1-2 stems of dill, sprinkle in 1 T. sugar and 1 T. canning salt, pour over 1/2 c. 5% acidity white vinegar, fill jar with water to 1/2" from top. Place lid and ring on jar and gently tip until sugar and salt are dissolved. Place in water bath canner in which the water is nearly boiling. Once the water comes to a rolling boil, reduce heat to a gentle, slow boil and set timer for 7 minutes. When timer buzzes, turn off heat, keep covered for 8 more minutes so total time is 15 minutes. Remove to a double layer of towels and let set for 24 hours. Test lids for seal, label and store until someone's hungry for pickles.

    I am doing this today! Thank you for sharing! It will be my first time canning anything! I did not grow up in a home that cans, however, as a mother I am looking for ways to sustain a more healthy way of life than all the junk that is placed into the food from a grocery store!

      Brianne, you will do fine. The first few canning sessions require a lot of brain power, but you’ll fall into a groove and it become second nature.

      Courtney, you've got this. It's not hard and they are so so yummy. Use the littlest cucumbers you can for the crunchiest pickles.

    Thank you for this simple video. I grew up with a family that canned, but didn't get interested until now. Pickles are so easy based on your instructions, and I am going to try it this fall (if it's not too late).

      @acountrylife I have made them a dozen times because it was THE best home canned dill pickles!! I always get asked the recipe, too!! My family eats them like candy!! It's just the perfect flavor!! Highly recommended!

    Do you soak your jars in hot water before plunging into the water bath? I thought it was dangerous to put cold glass in hot water bc it might explode. Great video btw!

      As a new canner I always kept my jars hot, but I don’t always now. Please read the instructions for your canner and follow the best practices. The water in the water bath isn’t boiling when I put the jars in, only hot.

    Can I use kosher salt instead of canning salt? Or non iodized salt?

      I’ve used all kinds and haven’t had any problems. USDA recommends canning or pickling salt.

      The salt and vinegar are what preserve the pickles so please do not reduce the salt.

    How long until they actually taste like pickles? I assume that the canned cucumbers need to wait weeks to be eaten so they taste strong enough and taste pickled. I made pickles as a kid but i cant remember how long we waited.

      I like to wait at least a week for decent flavor, longer for stronger flavor.

    Does the blossom end need to be trimmed off first?

      I usually trim the blossom end just a smidge. Some canning books say that end can be bitter.

    How long do they last when they seal up correctly? I can put them in my cupboard right not stay in fridge?

      Of course they are shelf stable once canned. They’ll keep for a couple years.

      Most canning lid boxes will say up to 18 months shelf life, but I've eaten 2 year old pickles and they are safe and delicious. Most old timers will say as long as the seal is firm and the pickled product looks good, it is.
