I would move the the baked goods and pack the shelves, reload the game, and see if that fixes it. If you check your muffins they are selling because they are selling off your large shelves with the cutouts standing behind them.
I haven't had a bugged issue with the pies but I did have my sourdough not sell for a bit. I dropped the price to the default price and they started selling again. maybe some of the baked goods are more sensitive to price?
Maybe trying moving those baked goods that arent selling to a different style shelf? Ive seen comments in discord about baked goods not selling on the medium shelves but i assumed that was resolved on latest update but maybe not
