Aaron. One of my greatest memories was being on that island with two of my best friends. We had sailed a 32 fot Morgan and anchored in the sand. This was years before the anchor ball system was available. We went snorkeling about two hundred yards away when we saw a man checking out the boat. He was a marine biologist with the national park. He appreciated us anchoring in sand. For the next few hours he gave us a tour of the underwater eecho system. It was breathtaking and memorable then and even more now. Thanks for sharing.
Thanks for the escape. The wife and I are up in NC just outside of Asheville so we've been trapped at ground zero for the past couple of weeks. It's been nice being able to go fishing with my buddy (you) and get away from here for a while. Blessings.
Your video came at the perfect time. Just returned to Tampa. No major damage due to Milton going south of us. A lot of yard debris etc. Just sat down to chill when you popped up. What a beautiful life you've built with your gorgeous wife, Tipsy and Tuna - and Will at times lol TY as always Aaron for your amazing videos. You always make me think about my beloved home in Mississippi on the Gulf - the lifestyle, instead of sadness I used to feel, I can now look back with gratitude.
When I was in highschool a group of 20 or so kids and some adults went from Ft Meyers to the Dry Tortugas. We took a head boat chartered for 5 days and went to camp in front of the Fort on the beach. We tried going to Loggerhead and we snorkeled the awesome shallow area full of coral. But the Coast Guard wouldn't let anyone on the beach there. The lobsters in the coral heads were full grown massive. We caught a lot of fish from the boat and had an awesome time. We ate fish we caught every night. Great memories.
I started storing my fillets in paper towels after seeing you recommend it and it makes a huge difference in how long it lasts and honestly the quality seems better as well.

Great videos. Brought back a lot of memories of the Dry Tortugas. Thanks for doing what you do and reminding me of the places I have fished and loved around Ocean Reef and north to Soldier. Just be aware, and this may be why they work so well, that paper towels have bleach in them. I filtered water changes for my reef tanks through them to try and save the water and use it again, and the corals DID NOT react well to the water that had been filtered with paper towels. You can guess why. Just something to inform your process. Probably doesn't matter that much but explains why they keep fish so well.

Brother...get Clams to whip up (if he doesn't already know) some recipes for those jack crevalle...or better, get a smoker for yourselves. This is a highly underrated fish that most (even locals) often overlook. I grew up eating these and they still are one of my favorite fish...IF!!!...prepared properly. The way you are insistent on bleeding fish (as is proper) these JC would be great. Proper bleeding is the primary mistake most make with this species and then proper fast icing down the body...This was just an awesome video that brought back lots of memories of down there...Thanks as always!!!

Pompano and jack crevalle are related and both belong to the Carangidae family of fish. I know when smoked JC and Pompano species are virtually indistinguishable to most pallets. As for receipts, I've tried many of the same ones used for Pompano. The key factors is proper bleeding, chilling the meat rapidly (same as Tuna) and I'm also a huge proponent of the meat wrapped in towels and not allowed to sit in their own juices at all nor for any time after bleeding. This also facilitates a spectrum of marinades that are found in some receipts. Thanks again for you comment...

As a wild game enthusiasts of many types and heavy meat eater, I learned decades ago that "aged meat" is often the best and that proper treatment is critical. "Toweling" meat is a very neglected and often coveted "secret" of many butcher of high-end abattoir. I've also noted in Japan that specialty "Itamae" have (as I use) dedicated cloth or linen towels that are only used for certain meats only...such as fish. These are replaced if the become saturated, and are also dampened (often with marinade of different types) when dried out. This is all and artform onto itself. If your getting smaller JC and don't have a smoker (presuming you enjoy smoked fish) these are wonderful smoked and last quite a while. When back-country tour kayaking I will often smoke the fish I catch which can last months preserved this way and up to a year or more depending on the method of storage. Good luck with your experiments and taste tests...
