It's the thermostat housing and the wiring coming out is a temp sending unit for a gauge. And yes if you are running it you'll need the thermostat for the coolant temp to stay regulated well.

Well if the driver is shorterhe or she needs to reach the pedals. That is why you have the adjustment on the driver seat. The passenger just has to help load, work. Or just sit there and be pretty.

I can see where the mud was all around that thing and i can imagine that the first mud bath you take it to will cake that thing and it won't cool very well. I hope you have a plan for the mud . Something to keep the radiator clean during operation.

i just cut the driver's side seat bar off of a gator yesterday. they are a pain in the ass when trying to get in and out of them. they route the fuel tank vent hose through it. found out when i cut the bar off.
probably better to have the radiator in the back behind the seats shielded to help keep mud from going straight in it and from blowing, the front wheel will load it full almost instantly as other said, belt guard is a very good idea so nobody gets eaten alive. belt shreds will tear you up like being whipped with jagged razor blades/barb wire, not something anyone should ever experience :))
Mount the radiator in the rear angled up. Like AdamLZ's FD drift car. Also it would be much easier to find a mounting location. You just need extra hoses.
I absolutely love that you are doing this project! But, for the love of God just cut the exhaust pipes and redo the exhaust.... you can always put the expansion chambers aft of the vehicle....
