This Chinese Chef's Knife has one major issue, otherwise potatoes would not stick to the knife blade. My first good knife was the one recommended but America's Test Kitchen; the 8-inch Victorinox Swiss Army Fibrox Chef's Knife. And I have four other of their knives. So I am familiar with their products and I am in no way downplaying their products; the price point of this knife is reasonable. For those who want to know how the issue of blades that stick to potatoes can be solved, go to “I Made A Huge Damascus Chinese Cleaver." That is Don Nguyen's channel. At minute 10:20, Don’s in-progress cleaver has sticking issues. At minute 15:12 that issue is solved. He then tells his viewers how the issue was solved. But that would raise the manufacturing cost of the knife. You get what you pay for.
