If you want a smooth sauce you can just add them with the liquid and cook out for 10 minutes then proceed to strain (making sure to press the solids in the strainer to get all flavour out) you could also add a cherry liquer or brandy in place of some of the wine. Reserve some cherries to use as garnish.
