As a Westerner, my first Dim Sum experience was a total freak-out. No menus. No prices. Nobody spoke English. I didn't know what 90% of the items were. The staff kept stamping our "card" with chinese characters. I spent the whole time dreading that the characters meant "$50", "$100"... Lol. But, everything was great and the meal was way cheaper than I expected. I kind of relaxed after that.
We were in NYC for a family vacation and made a lunch reservation for this restaurant. This filming was going on when we got there. Fun to watch take place and the dim sum was delicious!

so the tapping of the fingers I heard comes from the times of an emperor who wanted to see first hand how his people lived. He took his trusted servant and swapped clothes and headed out. Since the servant is playing the emperor and the emperor is playing the servant, when the servant (emperor) poured tea into the cup of the emperor(servant) to show respect to the emperor (which usually is bowing when a king or emperor gives you something) he simulated bowing by putting his 2 fingers together and tapping the table, just so they can maintain their cover....thus the tradition continues till today that when someone pours you tea, you tap with your fingers. - cool story bro.

I believe the finger tapping comes from when my boy Emperor Qianlong was undercover, and poured one of his vassals some tea, so because this servant couldn't bow to Qianlong and touch his head to the ground, he tapped two fingers on the table to signify the bow without blowing the Emperor's cover.
