How To Make Pizza Dough at Home with Erwan and Family (and Failing Multiple Times)

- Ever tried making Pizza at home? It'll take you multiple tries to figure out what works for you. It's all about slow rising and fast baking.
Recipe i ended up using:
180 grams 00 flour
120 grams all-purpose flour (unbleached if possible)
8 grams fine sea salt
4 grams of white sugar
2 grams active dry yeast
4 grams extra-virgin olive oil
1. combine flours and salt.
2. in your mixing bowl: 200g of lukewarm water + yeast + olive. Let sit for 5mins. Slowly pour and mix it with the flour mix. Combine and let sit for 20mins.
3. Knead for about 5 mins. Rest covered for 15mins. Knead again for 5mins. Let rest and rise for 1 hour. Knead for 3mins, separate into 2-4 portions. Let rise covered for 24 hours.
4. The next day take out the dough and rest for 45mins before using.
5. Cook at maximum temp until cooked. The hotter and faster, the better.

@@edlentagalog7840 There's something wrong with me too! Haha. I never liked pizza because for me it's super greasy. Same with lasagna. Although I eat the cheap pizza that costs around 70 pesos (that "pizza" is just basically bread, cheese w/ tomato sauce). I wish I could enjoy pizza like others do though haha glad I'm not alone
@@narieun8202 greasy pizzas are an American invention. Italian pizza aren't greasy.

Same here Erwan. I used “00” flour and end with semolina. The difference is I don’t use a dry yeast. Dough is best chilled 24 hrs, even 72 hours, still super dough. I love mine with Spanish chorizo, roasted eggplant, pepperoni. After I remove from the oven, I top it with pesto.. I tried one in San Marzano with pesto. Really good👍👍👍

Roccbox! Don’t use the wood fired option as it’s kinda weak. The propane valve needs a tweak to be able to run with our Philippine lpg tanks, but once running, it’s a truly proper pizza oven that reaches 900F and can cook a Neapolitan pizza in 90s. Do another video that does justice to this oven.
