Sometimes it surprises me how ridiculous Google can be. You have to jump through hoops to get unverified so you can then reverify and get their service to work properly. Good on you for figuring this out!
Thank you for looking into this. I usually stay away from service areas specifically for issues like this like. Side note: if you want to reverify you could remove all admin and mangers from the GBP and then claim the business again and reverify. I would do it with an account that is not connected to Analytics or GSC. You could also try requesting access from a gmail that is not current associated with the business. the trick would be to not accept the request so that a couple weeks later, Google gives the requester an option to verify via postcard.
Yeah, sadly, postcard is no longer an option. But your ideas for getting it unverified are solid! Spoiler alert: I have successfully unverified Trey's profile by making a bunch of whacky edits in a short period of time. Now we're working on getting it reverified.

Well that annoying! I recently verified a SAB business via video verification with no address. I wonder if Google treats that any differently. Also I wonder if citations play a role in confusing Google?
Even if you don't show the address, you have to enter an address to verify a profile. So your rankings will be based around whatever address you verified at.
I have successfully unverified Trey's profile and I can confirm that video verification is our only option. We're working on the verification process now.
sounds like you need to optimize it first! if you haven't claimed it yet, claim it, then fill out all the fields. we have a GBP optimization guide on our website that can help

How come that it will be defaulted back to the old address when the new address was added and approved by Google?
It's a known bug with Google. It's been a problem for a few years. Not sure if they'll ever fix it.
