I’ve worked a very popular local pizza joint for years. We stock a frozen pizza cooler in the lobby, and it’s like 20 percent of our sales which is saying something. The method is: make the dough, let it rise, roll it into 12” balls, let it rise again, then roll it. We have a nifty dough pressing machine, gets it nice and thin. Then, we use a cutting board and tool to perforate. Then we cut as necessary and crimp down the sides as is traditional. Goes in the 550 oven for 15 to 20 seconds or until it starts to bubble nicely. Afterwards, it’s allowed to cool, then packed and refrigerated. Next day, they’re put on discs, sauced, topped, wrapped, and frozen. I like them more than the hot ones we make. Turns out amazing

Wow! That is amazing! First off, where is this pizza factory located in? Man, when I saw that cheese that get dumped and not got put on the pizza, and thought it was going to waste until I saw that other assembly line for that cheese going somewhere else, and thought wow! Amazing organization. Also thought it was all robots and machines until I saw humans at the middle and end of the line. It really is true what the box says, no artificial flavors and no preservatives. Just tomato sauce, cheese, fresh dough, and then freeze to hold the flavor and prevent it from getting bad. Quello che fate vedere in questo video è invece un prodotto che si avvicina di più ad una realizzazione di pasticceria secca come può essere una crostata, infatti viene impastato e subito laminato con una serie di passaggi sotto dei rulli e il disco di pasta viene coppato da una sagoma tagliente in acciaio. Nel nome della automazione non si può snaturare un prodotto, anche perchè esistono linee di produzione che rispettano quel procedimento di cui parlavo sopra. Questa linea è stata progettata da una persona che non sa cosa sia la pizza, ma neanche l'arte bianca infatti non esiste prodotto di panificazione che venga subito spianato dopo l'impasto. Mi dispiace, ma è un pessimo esempio di genio applicato alla cucina.

The early-'60s when boxed pizza mixes predominated was an interesting time. Anyone remember trying to roll-out the dough on a pizza pan? My mother came up with the idea of adding a little more flour, a pinch of yeast then letting the dough rise for two hours and the dough became easier to work and fit the pan so much better.

With all that automation, even the sauce being put on in just the right amount and location... they still need a person to stand there and hand pour that jug of water into the flour mix? Like, where was he five seconds before that, standing in front of a sink/water spout filling that jug? And then walking back to the steel bowl to pour into? I found that funny.
It’s mostly automation but not everything you still need people to work the line when things go wrong and machine / people fix the machines also warehouse workers

It would be so much more efficient if they made pizzas square. There'd be less wast of dough and the pizza would fit into the square boxes. I mean it's a no brainer!
I worked at a factory that made French Bread pizza up in Erie Pennsylvania and basically the same thing only difference is we had to load the bread by hand
