As a native Texan, BBQ is something I grew up with. Brisket is king and can be found in countless backyards every weekend. The nuances of perfect BBQ, for those interested, are learned at a very young age. It was interesting to hear Joe's journey to learn some of those things. He is also correct about competition between BBQ joints. We Texans compete in everything. But with BBQ, there is a more community feeling. As a restaurateur myself, making the list of great joints would be fantastic. But I don't feel I'm competing. I make my BBQ, some people love it, and I can name a couple other places that are favorites.
As native from central California where the cut of beef is king “tri-tip “ that I’ve been cooking for many years. I have found myself trying to master the task of bbqing brisket. I’m am currently building a 60 gallon smoker with the hope of starting an new journey of bbq. You guys have great information that I will use. Keep up the great work.

Great interview. Lived in Chicago for 4 years and I learned about Chicago’s love for rib tips. My love is central Texas bbq, especially brisket. I hope Chicago falls for central Texas bbq as I have.
