I find the method of doing the chords all as separate notes interesting. As a piano player, it's confusing, but as a fan of soundchips, it does a good job of accurately representing what was going on.
By playing the single notes of a chord each one on a different time, and without pedal, he prevents the strings to sympathetically vibrate with each other, thus obtaining a dryer sound! (normally in a chord played at the same time, even without pedal, the strings in motion makes the other strings of the other notes vibrate and so on) And it sound uncanny because it isn't quite like it sould sound normally as one would expect. I don't know if this effect is intended, but it's interesting and makes the music sound peculiar!

It works as a representation of a MIDI file but man, it was not necessary to separate out the note-playing in the 4 middle videos like that. Not for me.
Yes, I struggle with the balance between accuracy to the mixing of the original and bringing out the other parts so they can be heard better as well. It is a constant battle.
