    Shallots are one of my favorite vegetable because say taste sweet like they are caramelized with being caramelized

    That's extremely dangerous to flambe using the entire bottle - if you don't pull it out quickly enough it could actually just explode! Or course, in a professional kitchen you're pushed for time so you do it because you're good, but please, for folks at home, pour it separately and then just add that little bit to flambe!

      It is burning Because the brandy gets very hot and the alcohol starts to evaporate. Brandy does not burn in the bottle.

      With a brandy, it'd be less risk, but it's still sensible for you to bring up this safety, considering any potential novice folk. If you're experienced in doing this activity, you know the details of when you're only balancing near the risk, but still a fair mention there.

    Kept seeing ads for this so I got some local shlot from the farmers market and fresh thyme fr the grocery. Didn't have demiglace so I substituted by putting a little extra butter and left over broth from a beef crockpot. Roasted garlic and thyme with olive oil for 15m at 350f then tossed it with the two shlot, added some baby bella towards then end when reducing with cooking sherry. Very delicious thank you for harassing me with constant masterclass advertisements of this

      The English is shlots, the American is shallots

      It is Shallots in some parts of Britain but the rest, mostly the posh parts usually say shlots

      The main reason for the brandy is the flambe, not for the flavor, so you really can't substitute.

      The main reason to add the Alcohol, at least in this case, is to “deglaze”. Not for the “flambé affect.

    After 22s of video I decided it wasn't worth it. Reasons: A) you don't bloody hammer the knife against the board for chopping onions, you slice them. You glide through them!! No noise allowed when cutting vegetables, you'll blind the knife unnecessarily (heard that zillions of times) B) Butter? with shallots? BUTTER? (no surprise though given his culinary background) sorry, immediately discarded.
    This wanna be should've face my mum in the kitchen, would've taught you the manners he clearly doesn't have.
