I think the Bear does it great in that they initially show Marcus really WANTS to be a pastry chef, but doesn't quite understand what that entails, so he's mostly engaging with it cosmetically, literally surface level, thinking about how pretty the pastries would be, about colors and presentation, about the visual fantasy of being a pastry chef. Then, when he gets the opportunity for a genuine education from real masters of the profession, we get to watch him really start to see the actual craft, the skill and technique that the cosmetics naturally arise from, and begin to understand not just how to be a better pastry chef, but we see him re-organize all of his priorities around that deep appreciation. He literally moves from a surface level understanding and appreciation, to something deeper.

38:00. apparently, our fruits and vegies have gotten so sweet through both GMO's and selective breeding, that some zoo's have had to start feeding their animals a specialized pellets to actually be able to maintain proper intake of proteins and the like. One example I was able to find through searching includes the Melbourne Zoo. It's a really fascinating rabbit hole to dive into, it's gotten to the point were some "healthy" foods are no longer healthy due to what we've done to them. (Did some more searching, and allegedly, Bristol Zoo and Paignton Zoo in the UK have done something similar for their monkeys. I don't know how we've done it, but we've almost ruined fruit ;-;)
Watermelons in the US are so sweet they have to be genetically engineered or something. Not complaining. Sometimes the "mendelian selected" product is good.
As a child of the 80's, let me confirm that Brussel Sprouts used to be inedible. Little balls or cooked grass. Now they're sweet and actually tasty. The only benefit is that kids actually eat them these days.😂
In slight defense of Marcus, at the time that he confused the yeast/cake donut thing, he had only been baking for like a year and exclusively made bread before [and only even one type at that]. She said she stopped watching before the point in the show that that was mentioned so it totally makes sense though that it would be a bad mistake to make if you were more experienced, like he may have seemed to be without that context.

That's the whole point of showing that he is mostly uninformed and his eureka moments are about basic stuff any professional would know. We're being shown that he's NOT a professional yet. He has passion, at this point in the show, but has never had the opportunity to actually get an education. The entire point is to show that he's not a great baker at this point, that he's basically a home cook who only knows how to do a couple things, but that he has the passion and desire to be more, and his character arc is about the struggles in fulfilling that potential.
I love this chef's attitude, she seems like someone I could easily sit down and shoot the sh*t with lol. She also is obviously very knowledgeable in her field! Fun video :)

I used to work at a donut decorator and I had to heat up those gallon buckets of icing on the stove. I developed carpal tunnel from wrenching that cold icing around with a metal spoon 😭

My great-aunt made these lemon cookies that everyone loved and raved about. They were just simple little cookies, but nobody could figure out how to get her specific texture and taste blend. Everyone tried to get the recipe from her, but she staunchly refused, and it ultimately died with her like she always said it would. A few months after her death, my Mom and I were going through some of her things and came across her Bible. It was one of those Bibles that she had notes and references scribed in every possible space after decades of teaching Sunday School. Mom handed it to me and a note card fell out. On the card was her lemon cookie recipe. She used Pillsbury lemon cake mix and made it into a cookie rather than a cake by omitting the water and adding a few eggs and a bit of oil. We laughed and laughed at her "top secret and guarded recipe", but Aunt Mary had the last laugh after all.
I think with the note cards the implication of having them hand written was the he knew he was lying so he wrote them up right then for him. Kind of showing the idea you shouldn't be afraid to admit you don't know something and to show the guy was a good teacher.
