Scoring a design into a sourdough loaf

  • Before baking, I like to enhance the look of my loaves by using a razor blade to make little cuts into the dough to create a design. As others have done before me, I use a piece of thread to mark a faint line in the top flour layer to keep me on track as I make my slashes.

    I've watched all of your videos and gained valuable information on technique and love your relaxed handling of the dough.
    I know in one of them you recommend your lame brand and for the life of me I can't find which video you gave that brand!
    I'm ready for a new one and would like to purchase your recommendation.

    Are you able to score such designs on high hydration breads? Do you think it could interfere with the oven spring if you score too much on a high hydration dough?
    I think you have some of the most beautiful loaves on Instagram, congratulations on your art!

    Please tell me what kind of baking paper do you use that can withstand 500 F degrees? I looked at the Amazon and there is a maximum of 450 F paper. All of the above is silicone.
