    The risottos I make are sometimes a bit 'wet', so it's good to see they aren't anything to worry about. The one in this video looks delicious, but can anyone tell me what is added from the glass jars? I'd hate to think I was missing something important.

    Why are the ladies discarding the cheese rind? Can't that be put in the food to be melted down? I always thought the rind was extremely edible.

      No cause it has mold on it that's how they age the cheese is by letting it ferment in a root cellar or basement the longer it ages or ferment the deeper the flavor

    U can easily do this at home.. just skip the rice cooker.. Hot Pan.. Oil minced garlic and onion.. saute.. then add rice and fry.. 3 min later add water or broth as you like.. one cup at a time.. then add all the things you like.. cheese, herbs, beacon(if you like), sausage (optional).. and keep stirring.. after 15min take of the heat and keep stirring (add salt to taste).. too dry add little broth.. too wet (on and off the heat).. off heat just stir it (to avoid rice sticking to the pan).. Risotto in 30min...

      1 - Risotto should not be fried should toast (it is a dish of northern Italy and is born with butter, but you can also use olive oil). 2 - After toasting the rice proceed with wetting it (Sfumare = "fade") of generally white wine (but also red depends on the recipe).
      3 - forget the garlic (sometimes it is also done without onion)
      P.S: the risotto is cooked adding broth (according to taste) gradually, following the evaporation and adding it for a quantity never more than one centimeter compared to the rice ... mix continuously! :) Ciao

      Ingrid Alcazar soak the rice for 6-24 hours. rinse 3x then cook with a few extra,cups of water. the outside husk will be gone and the body will be able to fully absorb the rice protein. also the extra water will make a rice broth full of nurrients. the regular way people make it, the rice proteins get washed away if you drain the rice. also rice cooker, the husky residue stays in the pot. 👍

    for a better taste quality of food and food smell ... you should let the oil hot and have a boiled before you add on onion inside and fried until a little bit yellow and onion smell comes out than you can put a rice and etc. The secret of a better or almost perfect food is starts from the beginning.

      Nope, because the onion isn't supposed to fry, in risotto, it just has to become translucent (in Italian we say “appassire”, wither). I agree that the oil should have been hotter, imho, but not boiling, otherwise you'd immediately fry the onion

    risoto is Spanish style rice, but beat to death. Spanish don't stir. risoto stirred constantly. both delicious.
