Simon Schama is a great story teller, great to listen to, but he is not a thought reader of people in the past. My version is that he is looking at the spectators assisting his public lesson while he is showing with his hand the movement made when the tendons are pulled.

The tendons are unfortunately not anatomically correct. He has mixed up the flexors and the extensors. Nonetheless a beautiful painting (my favourite)
