Hi Geoff! Love corned beef and yeah you put brown sugar and some cloves . It’s genuinely up to the cook what they want their corned beef to taste like. Some cook it in lemonade or ginger beer. I cook mine with salted water, onions and carrots then you can take them out put in a oven proof dish with bechemel sauce topped with bread crumbs and grated Parmesan cheese . And have some mash 🥔 and beans or peas on the side . So yum ! It’s so fun watching you eat the crazy amounts of food even if it’s not a challenge . Well done 👍

I remember my parents would take all different kinds of cold cuts and put them in a grinder to where it was kind of like a paste. Then they would add some mayo and relish. Man! It was the bomb! There's a name for that recipe but I had forgotten it. Thanks Geoff for reminding me of a special time in my life.

They have a supply box in the kitchen for cuts, burns etc. I keep a box of bandaids in my kitchen junk drawer for things just like what happened to you. I’m notorious for things like that. All you need is a box of bandaids. A tip from a nurse. Please throw the rest out. Give it to a dog or throw in the woods for the animals. That’s what I do.

I'd say chefs don't cut bread like you did, with the knife going straight towards their hand. That was... an expected outcome! As for the difference between italian and french breads, apparently italian one usually has some olive oil and sugar in it

In the kitchen I work in; we use a product called second skin, and double rubber glove that hand.
