They added more harmony to the strings and woodwinds while dimming down the aggressiveness of the lower brasses(basically trombones), overall giving the music a more legato approach. I know its to emphasize more on the vocals but man its a bummer to see the trombones losing its intensity in the finalized version of the music. Some parts include 0:45 - 0:53 , they removed the few D notes that the trombone would play layered on by the chimes or perhaps 0:28 - 0:39 , stronger mix on the strings overlayed on top of the brasses to produce stronger dissonances, maybe even 1:20 - 1:26 where it completely disappears in favour for the brasses to come in at 1:26 - 1:33 albeit very toned down. At least they kept some of 2:35 - 2:45 in albeit also toned down. You get the idea, more choir, more strings, more woodwind arpeggios, less brass, slightly more percussion. edit: I took a listen again, 0:45 - 1:00 they brought the notes an octave down so its a lot less noticeable until the trombones take on the melody at 1:00 - 1:06 Just take this comment as a small rant from a slightly biased brass instrumentalist.
I preferred the earlier versions. They were more intense and felt more anxiety inducing. Making it seem like this boss was a really big deal. The final version is a bit muted to me and much quieter.

@NoGameNolive-lk5sg I liked the EDM in the whale because it was at least done tastefully and separate from the actual whale bosses' orchestral theme, so you had two pieces of music that were different but good. I really hated the EDM in Arlecchino's second phase though, that was ass.
