I'm not sure. But I will look into it! I don't make subtitles so it must be a setting on youtube.

are you supposed to draw the second part from memory and notes or are you still supposed to use reference?

You are meant to use the first part as reference to inform your decision making in the second part.
You are not making a perfect replication of your reference nor are you making an image from memory alone.
