  • Panchmishali torkari is any Bengali mixed-vegetable preparation, in which the vegetables are first stir-fried and them steamed in their own juices till they are tender. As you might have guessed, the stars of this dish are the veggies themselves.
    There are several versions of panchmishali torkari. The choice of phoron (or tempering) will depend on the vegetables used. In this particular recipe, we are using potatoes, sweet potatoes, pumpkin, cauliflower, borboti (yardlong beans), cabbage, and brinjal, with a tempering of panch phoron.

    Thanks to you I am discovering Bengali cuisine in a completely new way !!! Really refreshing to see so many vegetarian dishes. Most restaurants here in Mumbai have chicken, fish and mutton options more than vegetarian. Makes it really difficult for a vegetarian to relish Bengali food. Im glad I found your channel.

    In love with the niramish recipes! I’m plant based and thought I wouldn’t enjoy bangali ranna anymore because amish/fish based dishes are always highlighted! But I was delighted to find so many niramish (and quite a few naturally vegan) recipes on your channel! Would love to see more niramish recipes! Thank you from Jalpaiguri! ❤️🙏🏼

    Classic traditional bengali style recipes with a brilliant presentation. You guys are really genius. One thing my mom does to this same recipe is, she adds 3/4 tsp(based on the quantity of the veggies) of whole moong daal while tempering. So the order would be: Dried red chilly----> Bayleaves----> green chilly----> paanch foron----> moong daal and wait the it becomes aromatic. Rest will be the same.

      Don't know how it will be done...moong dal will act as phoron and with vegetables it was not going to be cooked because we don't add water here.it will be like urad dal tampering used by south Indians.but as a tamper, 3-4 tsp is too much. I know an alternate recipe where 3-4 tsp offried Moog dal is boiled separately and added to the vegetables at last. But it is not called mix veg then, called 'ডালহুত' in East bengal term.

    I had done this torkari so many times but that taste was nt coming the way my maa cooks.I stay in Bangalore and is married in a punjabi family so cannot get to eat much bengali food which I so much want to eat.But your recepie gave that same taste and I cannot tell u how much I'm happy.Thank u so much.You guys rock.

    This channel is my favourite. The best feature is that you always quantify ingredients and mention time period of processing for each step. You also mention cooking under cover or in open manner. My criticism is that you don’t list the ingredients.

    রান্নার শেষে আমি এরওপর একটু শুকনো তাওয়ায় রোস্ট করা পাঁচফোড়ন ও শুকনো লঙ্কা একসাথে গুঁড়ো করে ছড়িয়ে দিই । খুব ভালো গন্ধ হয় ।

    A liitle suggestion.. It tastes great if u add kacha sorser tel at the end instead of ghee.. However i will also try wid ghee

    You are excellent. The recipe whether its rolling out luchi, making bhaja moshla or fish curry or labra the presentation is amazing.The sound effects of vegetables being cut or adding the photon to the hot oil is so real.Photography is magnificent.

    You guys are superb! Being a Bengali myself, it reminds me strongly of my ma's cooking apart from missing it everyday.
    Most cooking videos do not show the exact proportions and the exact time to cook and your videos do a great job of it. I tried out your 'Dimer dalna' but ended up burning the onions a bit. I so want to try this one out but half of those vegetables are not available here in Boston.

      Thanks, Malini. The beauty of panchmishali is that it can be made with several different combinations of veggies. For example, you can try using beans instead of borboti, butternut squash instead of kumro, and so on. Basically, as long as you have brinjal and some form of pumpkin/squash, it should work. And we hope you give dim'er dalna another go. It is one of our favourite dishes! :-)
