Good thinking! I thought of that too for a specific look. Remember that way, what you stamp would all be the same shape and very defined rectangles. This is all fine if that's what you are going for. By holding the tape ends, you have more flexibility of the length you want to ink.... make it long or just dab it where you need to fill in, or anything in between. Also, I feel you can also control the saturation better without a block. Get varied strengths of ink, even in one pass, like it's fading. Since you stamp with the sticky side, you would have to wrap the tape around a block backwards and then secure it with other tape on the top so it doesn't slip.
