Been installing a concrete edge for over 20 years and never an issue. Many edging products I have ended up see fail and had to reinstall many. I do undermine the paver an inch in to really give it a shelf and secure it. Nice angle down to shed any runoff and plenty of room above the concrete for soil to grow turf.
For driveways and vehicle borders it's much larger and usually place some rebar. Have had cobble stone curbs bedded in concrete hit by plows and not move.

We highly recommend the Ryobi cement mixer from home depot for $380. It can mix 3 80lb bags and we as a company has mixed over 4 pallets with with it and its been phenomenal. It saves a TON in labor!

If you use perma edge, they recommend 3/4 to 1” up the paver and no more. Need soil space to grow grass.

I predominantly use the extreme edge… I like your idea of buying the fiber mesh and just adding it…. I guess it’s high strength concrete and bagged fiber mesh for me from here on out…. If it means I can stop paying $18 per bag 😂
