That's correct, as you do it. You mark it when rolling cracks, not the first ones. Usually FC appears where it's supposed to be in the profiles therefor you can also use the time preference if you don't feel comfortable marking first crack. But if you do, it's more safe to mark it manually.
I have a question, my app always gives me a fan action of 0.005 in all profiles with different coffees, I have noticed when I use the software that my real speed graph is below the blue one programmed in the curve so I increased the fan action to 0.150 and the graph improved, is this normal or is it a bug in the app?
It's normal that the curves are not 100% similar. Only thing you can look into if the profiles are not perfect is, if you have chosen the right version of the density tube in the App.
