You can improve this technique by removing the top grate before lighting the chimney. That way, the scorching direct fire won't affect the grille were you put uncooked food. It is easier to clean afterwards.

Are you using instant light charcoal or just regular charcoal?

Always regular . You do it to save the cost and the fumes of starter.
What's the difference using a chimney vs making the charcoal mountain in the grill ?
I myself find the charcoal chimney to be waaaaayyyy easier. :)

I always used 3 full pages of news paper that is NON glazed/shiny... NON glazed/shiny is the important part.
