I could tell that your crème has curdled it is not because of the cream but it’s because of your egg yolks. See, when you added you warm/hot cream you did not temper your yolks before hand, which cooked your eggs and curdled. To temper your yolks you will be required to add you cream little by little while stirring the yolks you will get to the point where you have added half of your cream which means that your yolk should be tempered enough (close to the temp of the rest of your cream) now you can add all of your cream while stirring.
