Siren Head isn't just like, a nocturnal creature or anything like that. He's either gonna get bored and try to hunt someone else, try to tear the building apart, or persist until he kills you. He uses largely echolocation to find people and kills for sport as well as for food. That's what that guy meant by 'it can hear your shape', the sounds it emits bounce off of entities and returns to him, allowing him to detect where things are and what they are.

In this instance Riley saying “it hears your shape” probably means that it uses it’s sirens like a sonar (where the sound is sent out, bounces off of objects (and you) and then back to siren head, allowing it to make a mental “image” of it’s surroundings).
