This "Vegeta" you speak of is basically MSG - monosodium glutamate - the scientific name for the compound that gives food "flavor" or umami. It's in tomatoes, cheese, all the "flavorful" ingredients, it's the naturally occurring compound called MSG!
Actually, the way she cooks rice is not entirely incorrect for _some_ dishes. Like if you have to precook the rice to a certain point, when you are going to continue cooking it for a certain time after that. Like biryani, for those who know that dish. But for egg fried rice, this technique is not suitable, obviously. The rice needs to be fully cooked, chilled and dry.
Maybe she cooked basmati rice, that's how Indians cook. Chinese and other Asian wash the rice and measure water by their finger, the first joints on the finger.
Garlic and ginger should be added before anything else to give favor to the oil which will infuse into the rice and other ingredients, not in the middle of the cooking.
Hersha actually earned me as a subscriber to her channel for being such a great sport about Uncle Roger roasting her egg fried rice. There's a couple of videos now of the two of them collaborating. Where Roger keeps roasting her and from time to time her kinda just going; "What a weirdo". Its all in good fun. Jamie Oliver took some of the heat off her when Uncle Roger reacted to his egg fried rice.
Btw, Hersha Patel clarified that she was given that recipe from BBC. She actually has an old video in her RUclips channel from 4 years ago where she cooks basmati rice, and it looks a lot better.
We don't hate Auntie Hersha. She is sweet lady. We just hate that specific technique to cook rice, for every single person, who ever doing like that. Most of Asian have the finger rules because the rice will cook and absorb the right amount of water. And some cheat, we use rice cooker for consistent heat. And it depend which type of rice you use for glutenous, sticky, or grainy (Japanese, Basmati, brown rice, etc). For MSG part, I read somewhere that Westerner afraid of MSG because they once been propagated that MSG is bad for health, because they can't compete with Asian in food industry. Generally, Asian love to put MSG in food. What I've learnt, it supposedly taste umami and can enhance the taste of the food better. Originally it found from seaweed by Japanese chemist, and today they harvest it from fermented starch, sugar beet, sugar cane, or molasses.
1 part rice 2 part water is too much water...best is just put rice in whatever you're cooking it in...add water till it's a little under half and inch over the rice...easy..i just eyeball it.. i don't even need to use finger

This was fun to watch because we can relate to uncle roger's reaction, especially us asians who learned to cook rice at a very young age. Rice is the very first thing I learned to cook and now my 9 yr old niece is in charge of cooking rice.
I don't know this couple, but the dude knows his stuff. Very knowledgeable and probably did a lot of research. He even know about MSG, which btw, get his bad rep from racial envy in the 70s. There are a lot of articles about that, and yes, it's just salt.
Rice is just a great common household in India and other Asian countries. I bought a rice cooker when I lived in Japan 20 years ago. Thing lasted me 13 years, and I only replaced it because it was too small for our family. They are absolutely worth it if you make a lot of asian meals or prefer rice to other forms of grains. I also keep Ajinomoto (MSG) on hand when cooking meals. There's no better way to add umami flavor.

When they made a fuss about draining the rice, I almost felt insulted because this is actually how we cook rice in Iran! 😄 I mean literally, we do it every day. Although after draining the rice, we steam it until it is fully cooked. It won't even get smashed and lose its shape like the East Asian style.

07:00 She wasn't rinsing the rice. She was trying to cool it down. Pro Chef usually do this when they make pasta. After the pasta are cooked, they would put it in a bowl of iced water so they don't get overly cooked, while preparing other ingredients.
1.) 1 part rice - 1 part water. Don't forget to wash you're rice for at least 2 times. 2.) If you're rice is too wet put 1 spoon of rock salt at the top of your Rice cooker and recook for 3-5 mins. 3.) If you're rice is dry apply #2. 4.) If you burned it, yo pak ap.
Also, no seasonings!!!! Why? Sure, some ginger and garlic, good, but, no soy sauce, msg (which is not bad for you by the way, it is just a type of salt) and maybe something else. This must be bland.

In her defense, the way she cooks rice is how Indian people cook their Basmati rice. Basmati Rice is their preference and I guess that’s how it’s supposed to be prepared. I worked in a hotel kitchen and that was how my Indian colleagues do it except in big batches.
I saw in another video from a chef that for some rice (like Basmati), you want to wash first to get rid of starch. If it's other types of rice for like risotto, it makes sense to not wash it beforehand. But cooking like this is not technically correct
100% agree w/ mike about the best way to cook fried rice is to use day old cooked rice. In rare cases where you don't have day old rice just wash the rice more than usual to remove more starch...or so I've been taught by my grand parents.

In my country the rice cookers comes with a little measuring cup and normal rice(CR rice) is 1=1.5 and this is for the texture liked in here
