I would suggest dry roast the spices and the red chillies separately.or else it will burn as above.When dry roasting the spices,they should not smoke.otherwise it's a good recipe
I'm from Madurai, very close to Karaikudi, Karaikudi town is considered as the birth place of chettinad cuisine. No jaggery will be used in any non veg preparations and no games with butter or ghee, Pure sesame/coconut oil is used. This would taste much like a Manglorean chicken (Karnataka sweet chicken :p )

I love all your recipes. I never knew Chettinad style of cooking was so flavorful especially the fish recipes. I always thought Bengalis cook the best fish dishes but I am learning new ways of preparing fish here :)
It is a good recipe. Tip for roasting the spices to perfection is to roast them separately. Each spice has its own Temperature resistance. If you roast them together, some might over roast and some might not roast at all. A little more dash of Ghee would have helped. Thank you very much for the recipe. 😃

Please excuse my ignorance but what is jaggery? Also, with the amount of chilli in there I'm guessing this is a really hot dish, would it still taste as good if I was to reduce the amount of chillies? Thank you.xx
Jaggery is unrefined sugar, which is made from reducing sugar cane juice.You can reduce the amount of chillies, or choose a mild variety...like what is called "Kashmiri chilli" in India..but, I suspect the proportion of the other spices used changes as well....it is an art perfected through trial and error.!:)

In most Indian Dishes, we Dry Roast spices Separately, as each spice has its own Different Timing. I think for the sake of this videos length she did it together. If each of the 8 spices were shown how to be roasted, that would take up another 10 minutes.. not to mention make the video boring. Another 10 minutes can be added, About : - the Quality and type of Chillies, Using Kashmari for color or using Kolhapuri for spiciness, or about using Rajapuri hot Black pepper and roasting it for less time or using Goan black pepper to prick punch heat, or instead of grinding in mixer use a Stone/coarse cut the Rosted Fennel seeds, to give a final better texture while eating... or how to replace jaggrey with honey or sugar.. or how much time to marinate chicken Like come on.. the Aurthor made the Video according to which she likes to have her Dish. As for the meat Some may like it Cooked, some prefer Half done, some prefer it pink.. We cannot judge them, as we don't live in the Environment, climate or culture they thrived. So lets just stop judging the wrong details and adjust according to our System which we love..
you seem to be an amature chef.. dry roasting isnt burning the spices.. dry roasting is done on very low flame for just 30-40 secs.. dont justify by saying this that it is a chettinad recipe and they just do it this way...because chettiyars doesnt roast the spices like this..(by burning them black). sorry if my comment hurt anyone's sentiments..!
I thought so too...She literally burnt all those spices and no one does dry roasting in high flame...It's simple basic common sense. Looks like she might not have stepped into the kitchen except for these videos.

Jaggery is raw sugar made by boiling sugarcane juice. You can use little amount if sugar also if jaggery is not available.
