I love fresh oil or relatively fresh oil. However, if they don't change it regularly, it'll definitely affect the taste of the food. You've also got to have separate oil for fish as I find that fish oil will also greatly affect other foods taste.

Under seasoned food is disappointing but its better than over salted or poor seasoned food. You can't fix those. They will always taste bad but you can always add salt. It's not a better option than seasoning while cooking but its serviceable.
By the time I dunk my fish in tarter sauce and hot sauce I don't need a bunch of seasoning. Unfortunately with so many different taste buds of different people you can't make everyone happy, but if people are coming through the door then keep doing your thing.

The flavor I got for the tender was Kamora Lee flavor and i called it a day with their two lemonade flavors blueberry and some mixed strawberry. We have a Hip Hop Fish in our city and they flood the same thing, cover their fried food in that Garlic Dust and you don't taste any seasoning beyond that! Haven't been there in over a decade, but everytime I go by there's a line wrapped around the curb! Why? Because Black people love cheap, fried food especially in the South and they are not going to push these places to do better.
I'm starting to think you expect way too much from the places that use crack seasoning. All fish and chicken places that use crack seasoning all donthe same thing in order to make sure your order is out in 15 to 20 minutes. Nobody is gonna season before they cook unless it's a mom and pop or a boutique foodery.
