I saw that you can request a 3 year extension for the experience requirement -- this seems like it might help with the part time situation. Would that extension allow folks to pursue a CFP with part time experience?

Im a CPA that passed the CFP exam in July 2022. I have been working in public accounting (Tax) since 2016 to current. Would my tax preparation/tax planning count for some experience? I'm also studying for the 66, with the thought of applying to a BD or IA within the next year to take the 7, should I intead be doing the 65? Would you recommend the 65 or 66 prior to making the switch to an employer that will hire me as an advisor/ RIA? Any thoughts appreciated.
The Series 66 is effectively a combination OF the Series 65 (to give investment advice as an RIA) and the Series 63 (for brokers of broker-dealers selling securities). If your plan is to become an advisor at an RIA, you don't need the Series 66, just the Series 65. (There's nothing 'wrong' with the Series 66 here, it just covers more than you need to work at an RIA.)
The bigger question is setting a plan of whether you intend to go the broker-dealer or RIA route.

Usually yes, there are entry-level jobs that qualify for the experience requirement. Sometimes as a paraplanner or associate advisor. Sometimes in an operations role (e.g., Client Service Manager) working for an advisor (which still counts towards the 3-year experience requirement).
