The Perfect Seared Achiote Yellowtail Hamachi Recipe

Hello everyone,, This is a quick and easy video on a simple achiote marinade that pairs so well with yellowtail, honestly this pairs well with any meat! Served alongside a 1000 layer potato pave. Recipe:
1-2 lbs. Yellowtail
1 tbsp cumin seed
1 tbsp coriander seed
1 jalapeno
6 scallion (green tops only)
3 cloves garlic
3 tbsp achiote paste
8-10 cherry tomatoes
3 toasted guajillo chili
1/2 juiced orange
1/2 juiced lime
s & p
Tomatillo Salsa:
8 Tomatillos
6 garlic cloves
1/2 onion
1 serrano or jalapeno
cilantro
Char ingredients in a pan on the grill and cook for at least 10 min, add 1 cup water and cook for 5 min, blend with cilantro and adjust seasoning with salt and pepper
