  • Ingredients:
    Mathanga /Pumpkin - 350gm
    For cooking pumpkin/mathanga we need 1/2 tsp turmeric and 1/4 tsp spicy chili powder
    Green chili - 3
    Cumin seed - 1/2 tsp
    Garlic - 3 small
    Grated coconut - little bit less than 1/2 cup
    Grated coconut for frying - 1/2 cup
    Curry leaf - 1 sprig
    Salt as needed
    For seasoning:
    Mustard seed - 1/2 tsp
    Dry red chili - 2
    Curry leaf - 1 spring
    Coconut oil 2tbsp
    Direction:
    1. Peel outside layer of mathanga or pumpkin and chopped into small pieces( watch video)
    2.Cook pumpkin with 1/4tsp spicy chili powder and 1/2 tsp turmeric powder add 1/2 cup of water cover and cook in low flame.
    3,Once started boiling add salt.
    4. Meanwhile you can grind coconut grated with green chili, curry leaf, garlic and cumin seed don't grind them too paste.Keep it aside .(watch video).
    5.You can add ground coconut mix to pumpkin once it half way cooked. Cover and cook.watch video
    6.Heat a pan fry 1/2 cup grated coconut.keep it aside.
    7.Once pumpkin coconut mix well cooked well, switch off the flame add fried coconut to it mix them well.
    8.Heat pan wth coconut oil and fry all seasoning ingredients and add to cooked pumpkin coconut mix stir well tasty Mathanga emissary is ready to serve.
