That *is* the help.
It gives us an idea that even after headcrabs takes over someone's body, they still retain some of their sentience; not enough to control their body movements, but still enough to somewhat understand what's going on. This means that Father Gregori knew the humans being controlled are in considerable pain and that's why he says "aim for the head" and "I will end your torment" because he wants them to die and be relieved of the suffering they are subjected to under the headcrab's control. This makes it ten times sadder because they used to be the people of Ravenholm and knew Gregori personally.

@Gol Acheron We don't really know if Stalkers are in a lot of pain or how much they remember about their former lives. Most of the ones we've seen just do work in the Citadel, but as a zombie you're forced to watch (assuming your eyes are intact and the headcrab isn't blinding you) as you're controlled to kill people, and you spend most of your time lying down in a puddle of toxic waste.

the reason why they scream for help is because they are still alive (the victim of headcrab attack) but can't control their body since it was controlled by the headcrab, so its better to shoot them rather than seeing them suffering lol

It's better to kill them, they are still sentient and in constant pain with the headcrabs invading their brain
Imagine that you are trapped. Can't see anything but you can hear and feel. Now imagine the pain of your chest ripped open with the internals exposed to the air while no one can help you because you are under control. Even when "you" attack someone you feel the pain of your broken hand with claws hitting the target and it hurts. The only escape is death since the headcrab keeps him alive till it dies.
