    This term includes many plants whose leaves can be eaten raw. Some, in their natural state, offer a sweet and pleasant flavor, others like chicory, will have to be blanched to remove the bitterness or to make them more tender.
    Lettuces belong to various botanical families (Asteraceae, Portulaceae, Apiaceae, Brassicaceae, etc.) and sometimes require very different cultivation methods. Some grow in shade and need plenty of moisture and cool weather, others will only thrive in full sun and heat.
    In the collective unconscious a salad must be very green, but many vegetables eaten as such wear warm colors. Brown, red, yellow, the modern salad known as mesclun aims to be attractive and varied.
