I must be honest with you, I haven't explored J5 extensively. However, I'm positive the API ref should help - johnny-five.io/api/stepper/ In your case, I believe the sketch hasn't properly been uploaded (this is where you need to have the hardware connected). I would make sure I'm using the right sketch for Arduino Uno and go from there.
