I'm the same with cooking. I decided it is time to do something about it, what is the most annoying is how hard it is when you lack all the basics. "Cook this, but first cut an onion" when you have to stop and find out how to cut an onion it becomes super annoying. Now that I have more of the basics down it is starting to get easy and turns out better. Just put in the effort Baus, cooking decently is one of the best skills in life!

Ingredients 2 big onions(or 3 or 4 medium ones) 2 Garlic cloves 2 medium to large Carrots 2 Cans of good canned chopped tomatoes, brands matter, mutti cans is ok, de cecco is ok, if you really want good ones you use san marino tomatoes 800grams if you do that u squash them with your hands first and add them. It does make a difference tomato type is important in bolognese. 2 sticks of celery 350 -400 ml of red wine (very important for taste does not need to be expensive, dont worry there will be almost no alcohol in the dish in the end less than non alcoholic beers) Panchetta Italian bacon about 200 grams if you cant get it use a gourmet bacon, artisan bacon, not standard industrial bacon. 800-1000 grams of minced beef with 10% fat or more A bit of olive oil to fry in pepper 3-4 bay leaves Cut the bacon into small cubes by cutting about 6 thick slices and cut them on the other side after. Fry them in the pan with medium low heat, with 2 tablespoons of olive oil until golden. chop the onion and garlic finely and add them to the pan with the bacon/panchetta. for a minute or 2 until glassy. Add the minced beef and turn the heat up to medium high, get it nice and brown after all the moisture is gone from the vegetables and meat, if you give good heat you will get some extra browning and taste but dont overdo it. Just get the water a way and brown it not just make it grey. Add the red wine and let it reduce to about 1/3 of the liquid - so you see how much wine there is, boil it until theres about 1 third of liquid left compared to the point where u put the wine in. Reducing is done with medium high heat or even high heat. Else it takes to long. In the meanwhile you mince the carrots finely into small cubes, along with chopping the celery finely. when the wine is reduced you add the tomatoes, turn down the heat to low, and add the carrots and celery and a bit of pepper. No salt. add the bay leaves and now let it cook you dont have to do much from now the next 2,5 hours And here is a very important point, let it simmer for at least 2 hours and 15 minutes on minimum heat so 2-3 hours 2 and a half is usually enough, stir it once in a while it should only just simmer meaning there should be a bubble once in a while not a constant flow of bubbles. This can also be done in the oven at 130 ish celcius if you have a pan that can go in the oven with a lid. In the end the sauce should be thick and not watery and the fat is disolved in the dish from the meat. There you go cook your pasta and add a good amount of parmazan on top when serving. The dish usually does not need salt but you can add it in the very end if you feel like it, but not before cooking it for 2 hours. -------------------------------------------------------------------------------------------- EDIT: Great responses guys, I have found this recipe some 5 years ago and tried about 10 different original ones from Italy this I found to be by far the best. TIPS AND TRICKS FOR THE ONES THAT HAVE TRIED IT SOME TIMES: To make it even next level if you are getting guests for dinner, what you can do is when you add 800 grams(dont go with 1000 grams if you do this) of minced beef, also buy 300-400 grams of cube chopped beef, the best is calf meat (super tender) if you have it in you country. And chop the cubes in half or 3rds so they are small and add along with the minced beef, you will then have minced and chunky meat in it which adds an extra layer structure and taste making it a hybrid between bolognese and rague Napolitarian. When simmering make sure there is a bubble once in a whiile but not alot of bubbles and stir once in a while, If you by some chance before the 2,5 hours has gone by have removed all the moisture add a bit of water so you dont burn the bolognese. It happens if you cook without a lid throughout, so use a lid with a bit of space get the steam out. You are going for in the end a thick sauce that doesnt have much water in it. Lastly pasta brand matters and to cook aldente is important too. You will never go wrong with the brands De cecco or RUMO but there are many good ones out there, You want tagliatelle or fettuccine type pasta not spaghetti and you do not want fresh pasta made with eggs but dried which can become aldente fresh pasta is too heavy with such a sauce as bolognese. When cooking pasta 3/4 tablespoon salt per liter of boiling water, cook up to 1 minute before the pasta is cooked per the label on the pasta. Test the pasta by taking one up and chew it if it is just right for you stop the cooking of pasta immediately.

My biggest tip, if you have an oven, you can put pretty much any root veggie, meat, fish, whatever, in the oven with oil salt and pepper, and it'll taste pretty good. you don't gotta be the nostradamus of cooking. also, a decent egg fried rice will definitely help round out your recipe roster. all you need for flavoring is garlic, soy sauce, curry powder and sesamy seed oil. (dont get me wrong, it can be even better with different and more diverse flavor ingredients, but I'm not about to tell baus to buy shrimp paste or oyster sauce)

My biggest tip, if you have an oven, you can put pretty much any root veggie, meat, fish, whatever, in the oven with oil salt and pepper, and it'll taste pretty good. you don't gotta be the nostradamus of cooking. also, a decent egg fried rice will definitely help round out your recipe roster. all you need for flavoring is garlic, soy sauce, curry powder and sesamy seed oil. (dont get me wrong, it can be even better with different and more diverse flavor ingredients, but I'm not about to tell baus to buy shrimp paste or oyster sauce)
