And the fact is, obviously, they are just getting drunk - that's why they are so happy with it
The amount of alcohol present in most homebrewed Kombucha is similar to an overripe piece of fruit. People who are sensitive to alcohol may feel some effects however most of the "buzz" is caused by B vitamins in living form. People who receive B vitamin shots report a similar feeling of euphoria and some who supplement with B vitamins experience "niacin flush" - all of that could potentially feel like "drunk" to someone who doesn't drink - most never feel "intoxicated" in the sense that they are not able to function and are impaired. Your body is unique and your response will be your own which is why we always say "Trust YOUR gut!"
Not necessarily because ginger beer is a wild ferment that may not have acetobacter present - its the acetic acid bacteria that naturally reduce ethanol into organic acids. Most "traditional" plant ferments will hover around .5-2% ABV and due to the nutrients (yeast, B vitamins, etc) will not be overly intoxicating, though you might get a little buzzed depending on fermentation time, and other factors.
It is not. It is an acetic acid ferment like vinegar however we consume it before it can get as sour as vinegar which means trace amounts of alcohol can remain. That said, the B vitamins and organic acids support a healthy liver which is why we don't get drunk from drinking Kombucha though some may experience flushing or light euphoria due to the B vitamins.
