So instead of purchasing cooking spray, you can actually get a bump based aerosol bottle with a spray nozzle from like pampered chef or possibly amazon and put olive oil in it. You pump the top and then the spray nozzle creates a mist of the olive oil (or other oil you like). We LOVE this thing.

    Hello there 🕊️
I learn so much on your channel!!!!! 💛
The fresh cheese/cottage cheese looks perfectly fine. Don't forget that the store baught cottage cheese is made with more chemicals which makes the cottage cheese separate. Plus their milk is a lot lower quality than yours. As I know from my grandparents homestead this is perfectly fine fresh cheese, which can be turned into lot of different fresh or aged cheeses. And this kind of cheese gives a super European stile cheesecake. 💛

My Austrian Grandma made homemade cottage cheese with lemon juice, not with rennet. Also, the milk is brought to a boil first then the heat is reduced to low. The lemon juice is added to the hot milk and slowly and gently stirred as the curd separates until all is fully separated. The curdled milk is then poured over a bowl with linen towel to catch the curd. It is wrung out and then put into a bowl with cold water. Wrung out again and now the curds are separated with a spoon. At the end she added heavy cream to the consistency she would want it to be. Sometimes she added sour cream instead of heavy cream if she needed it that way for a specific recipe. Her Cottage cheese was always super delicious.

We don't have to have big bed since it's just he and I. I'm 64 years old and I've been canning ever since a child. Every summer vacation I was at Grandma's helping her in the garden and learning and learning how yo preserve food for at least a year.

There’s so many homesteading channels that I’ve come across since I really started to give this life some serious thought but just came across your channel today. All I can say is Wow! The more I learn, and I’ve learned a lot from you guys already, the more I realize how much there is to consider when planting or growing just about ANYTHING. Haha. My goodness it’s kind of overwhelming. But I know it’s all trial and error and you have to learn and start somewhere. I have 5 acres and I feel like I have the perfect space to start becoming more self sufficient but I struggle with procrastination. Watching more of your videos might just give me the motivation I need. Thanks for sharing your life and process with the rest of us. God bless.

That's so good to hear! Thank you. It can be overwhelming, but especially if you try to take on too much at once. We started out with babies in diapers, building a house, starting a garden, having chickens, and getting a milk cow pretty much all at once 😬 NOT recommended 😂 Take it one step at a time. Maybe start a simple garden one year, then get chickens the next. Get comfortable with that before diving into a milk cow, get good at a few simple garden things before adding more variety, etc. You got this. Have fun too!

I ❤how apple mint sounds! I don’t think we have that in the UK. Chocolate mint! Does that taste like chocolate? We have regular mint and spearmint.
Sometimes stems are actually toxic in some herbs. Like sorrel for example, take the stems out before eating the leaves. I learnt that one the hard way.
I love learning stuff like this. I miss drying herbs for tea and haven’t done it in years. But this is inspiring me to do it again.
Never seen tallow be rendered before….interesting! Thanks for all the info.

I really do believe that starters become more robust over time. So if you know a friend who has one, that would be a great option. You can also order a bit of starter off of Etsy. They aren't expensive at all and will save you a lot of time and grief. Keep dreaming about the dairy cow😉

We grow much of our own medicine as well. I wish I could hang my herbs, but without air conditioning, it gets super hot here in Oklahoma. We do dry what we harvest in the fall. We also make our own soap and shampoo, lotions(tallow is wonderful for the skin), balms. Our next goals include finishing the root cellar and turning off the electricity completely. Slowly but surely we will get there.

Great information about herbs, drying and making teas. Thank you very much. God bless y'all and keep growing. P.S. I have basement envy! ( I grew up in Nebraska and always had a basement, but no basements or root cellars here in TN due to rock and high water levels).

Staying out of the seed oils also makes you much more resistant to sunburn! I have extremely light skin and now I just tan instead of burn then tan every year lol

I've noticed that I don't sunburn as easily but I didn't know it was the lack of seed oils - very interesting!

I’m praying I can get to this point to where I don’t need to go to the store for anything. I can make it at home where it’s safer and healthier.

We may not be able to get to the place where we don’t have to go to the store for anything, but it sure is nice to not have to buy as much, and to have healthier food!

That's amazing that you are able to grow and raise so many things on your property! We are on a few acres but within city limits, so we have a lot of restrictions on what we can raise. We have chickens and may get goats, but that will probably be the extent of it! I love how you shared ideas that we could try even without having lots of land. I recently learned sourdough and am hoping to get a second dutch oven to bake more bread at once!

Chickens, goats, and gardens.. sounds like pretty solid homestead to me! Maybe you could also do sheep and rabbits for meat.

I'm not sure if this has been said yet, but the yellow cottage cheese is normal... it's bleached before it goes to the stores. I don't like cottage cheese but I tried baking it once for a boyfriend... I ended up liking it warm (I used milk and vinegar to "curdle" it. It was basically "curds and whey" like in the little miss Moffett nursery rhyme.
Great video and I love your storage areas!!

That’s how I remember a goat farmers cottage cheese looked like. Cooked over stove, it curdled and was quite delicious. Don’t remember what they added, but could have been vinegar and some salt.

My dad also built a drying rack like this for my mom. Its made from wood and stands on top if our wood heater so its really warm and dry up there and its really really cool. Not too hot and the walls are also made from wood with a screen door to keep dust out. Buce to see you have something similar ❤

Growing up we butchered a hog every year and my mom rendered the fat into lard. She did it in the basement kitchen but you could sure smell it upstairs. When cooled, it was pure white and was used for frying anything and made the best pie crusts!

Buttermilk can be easily made to add to your cottage cheese. Mix 1 cup whole milk with 1 tablespoon of white vinegar. This equals one cup of buttermilk. Hope this helps!
    Keep up the great work!
