There is no doubt, you selected few of the best foods offered in Lahore. Chickpeas with mutton by Haji Gulom Rasool are the best, Khan Baba cooks best food in Lahore, even his chicken karahi is better than Butt or Bhatti, whatever you tried. Faluda and Gulab Jamon are also from the better places. Goat testicles you have tasted at Khan Baba are not the correct way of eating. The right way of eating this particular dish, which is called Takatak, contained goat testicles, heart, kidney and mutton from ribs called champ, they are cut into very small pieces and cooked on a very large and round skillet with butter and spices. You definitely missed that dish in Lahore.
I was born in Peshawar, studied in Lahore and now working in Hong Kong. There are few Pakistani eateries in Hong Kong but no one can match with the taste in Lahore or Peshawar.

While mutton is specifically sheep in most western, english speaking countries, it is interchangeable with goat in South Asia. As goats are far more common in the region, it is highly likel;y that that is what you were eating.

It amazes me how meat focused America is. Whenever I watch someone from a meat protein based country go to countries like Pakistan, India, well basically countries close to the epicenter of where spices come from, invariably they always say how easy it would be to be a vegetarian where they are. We need more food like this in America. You can find it. It’s just enough people don’t to make it mainstream.
