    Made this a few times now. Very nice. Love SoW dishes.
    You might want to edit your recipe page though:
    1 ½ tbsp oyster sauce
    2 tbsp rice wine
    2 tablespoons/ 2 capfuls of Shaoxing Rice Wine
    1 tsp sugar
    30ml hot water (or a generous splash)
    Pinch of sugar
    There's some duplication, and the hot water is not for the sauce but to cook the 'shrooms (according to this video).

    Wow thank you for this. I wanted to do something with mushrooms and chicken but didn't have any cream to make something Italian like. So I tried what you provided but added onions, peas in a pod, and peppers along with what you stated in the video and it came out good!

    I added a pinch of five spices to the chicken marinade and a bit of dark soy sauce to the sauce for the stir fry. Turned out to be a very good idea!

    Perfect. Generally easy to do, but really worth doing well. I’m still trying to know the right balance of oil, as I tend to use too much. Sugar, too, I have to keep working on - I like to keep it on the low end. I havent done that ‘roll’ cut for thighs, so I will definitely be trying it.

      Totally agree, this recipe is absolutely amazing when done well! As for the oil, it's all up to your preference, try adding a little less and see how it comes out! Same for the sugar. Thanks for the comment - Lee

      I've just read that apple juice or white grape juice are good substitutes, but I'm sure the flavour will change a bit using these. Give it a go and let us know what you think! - Lee

    Hi Jeremy - love watching you .
    I have a question.
    How do you keep Noddles " Al dente " in a cantine ?
    I worked in one cantine - if we had the Noddles on display they would go soggy , but if we left them outside to warm up on demand ,was so not practical.
    Do you have any suggestions ?

      Hi, if you cook them, rinse them in cold water and then dry them on a tea towel then they should keep fine in the fridge for a couple of days! - Lee

    Jeremy, I'm so sorry I ALWAYS come here asking for substitutions since I live in a very small town that doesn't have most asian ingredients ////: but what can I use to substitute the oyster sauce? Or should I just try another recipe? hahaha

      Mix together soy sauce and hoisin sauce at a 1:1 ratio and it should be fairly similar! - Lee
