You might want to edit your recipe page though: 1 ½ tbsp oyster sauce 2 tbsp rice wine 2 tablespoons/ 2 capfuls of Shaoxing Rice Wine 1 tsp sugar 30ml hot water (or a generous splash) Pinch of sugar There's some duplication, and the hot water is not for the sauce but to cook the 'shrooms (according to this video). Wow thank you for this. I wanted to do something with mushrooms and chicken but didn't have any cream to make something Italian like. So I tried what you provided but added onions, peas in a pod, and peppers along with what you stated in the video and it came out good!

Totally agree, this recipe is absolutely amazing when done well! As for the oil, it's all up to your preference, try adding a little less and see how it comes out! Same for the sugar. Thanks for the comment - Lee

Hi Jeremy - love watching you . I have a question. How do you keep Noddles " Al dente " in a cantine ? I worked in one cantine - if we had the Noddles on display they would go soggy , but if we left them outside to warm up on demand ,was so not practical. Do you have any suggestions ? Thanks.

I added a pinch of five spices to the chicken marinade and a bit of dark soy sauce to the sauce for the stir fry. Turned out to be a very good idea!

Hi, if you cook them, rinse them in cold water and then dry them on a tea towel then they should keep fine in the fridge for a couple of days! - Lee
