Just made cauliflower tacos. Used my leftover mushroom crumbles in thrown together Sheppard’s Pie. Mixed it with your gravy recipe (I eat ALL THE TIME), and heated in air fryer! Amazing!
I made this recipe this evening. I didn't have enough mushrooms, so I put a half can of red beans in the missing mushrooms. I swapped out walnuts for pecans allergy issues with walnuts. I followed the recipe and added a few more of my Mexican secret spices to it. It turns out amazing. Who knew that cauliflower could taste almost like ground meat. This a keeper for sure. Thank you so much.

In the oven now and my kitchen smells heavenly! Tasted awesome raw so I know the finished product will be great. I left the walnuts out but I think in the future I might crumble up some tempeh and add it to the mix for some protein. Thanks for a great recipe!

As an aside, I have to eat very low sodium and have found that coconut aminos is less sodium than low-sodium soy sauce, with no flavor loss. For your first video I really did think this wasn't even that bad (I've seen worse first attempts), but it doesn't matter because you're making a start and doing it so good on you, that's what matters !!! Brand New Vegan seriously, lol. Can't stand the stuff. I used to always buy my sausage without sage. I dare say that was the 'regular' sausage as they always labeled the ones as Sage that had sage. 😂😂 However, I did prefer the "hot" sausage.
OK. I gotta try this. I DESPISE cauliflower (flavor AND texture), but the other "meat" variants I've tried all end up being mushy or beany and just, gross (for taco meat). I loved tacos "in the before". If they cook down and get the texture right, the spices should hide the distinct cauliflower flavor that I can't stand. Looking forward to this. Edit: If you have a nut allergy like me, maybe try some chopped sunflower seeds. Like walnuts, they offer a little crunch but still soften some when cooked. Done this in other recipes and they worked out fine.
Annnnd I finally got around to making this. You sir, are a genius. Didn’t use nuts (like I said, allergies) and didn’t try with my sunflower seed option. Just tried straight up. SO good! Definitely putting in my regular rotation of dinners!!!
Chuck about how many total cups does this make? I have this recipe for batch prep in mind so I need to multiply recipe. According to Mary's comments on your website it freezes and reheats well!

For something like this I would just take the mushrooms and great them on a medium sized whole grater. I often do that with mushrooms. Easy breezy!
