This is not the correct way of making paneer makhni . Mistakes - Too much of paneer used and the utensil used is not okay , this way the paneer will break , second - Why water is added at last , if it is very necessary then it should have been used while making the curry .

any reason why you cooked paneer separately and poured the gravy to it? it kind of ruined your paneer.. other way would have been fine
I too felt the same...the paneer pieces appeared to be crumbling when the gravy was poured on top of it.
