Your croissants from freshly milled hole grain look amazing Felicia!!! So much better than the ones that I saw on another channel. I know that this is a very difficult challenge to make at home and export if whole grain flour but you hit the ball out of the park! 👏👏👏❤️

I’m going to share this video with my 16 year old daughter. She decided this week she wanted to make croissants. She found a recipe and made them, just like that! They turned out amazing. However, she hasn’t experimented with whole grain flour yet.

I have not bought 1 loaf of bread all year! The only wheat based food that I have purchased is tortillas though I have made those as well.

What you're doing is called "Milfey." It's French for a thousand layers. It should be noted that you need the temperature high to cause the "puff". Here is another tasty treat you can make with Milfey. Simply slice your dough into 1"x4" strips. Butter the tops with melted butter, top with cinnamon and sugar. Bake at 400 for about 10-15 minutes...Enjoy some Puff pastry cinnamon sticks.

I think I need to make these and the others from August on. I stuck with the challenge through July and really enjoyed it. I haven’t bought much store bread in 2023, so I’d say I mostly succeeded. 😁 Thanks for all the great videos and recipes!
Yes you have succeeded!! The whole point wasn’t necessarily to make ALL the breads but to not buy bread from the store as much as possible 😀

I’m new to whole grains and to your channel. Do you ever use sourdough? I don’t want to give up my sourdough baking.

What speed did you have the dial set to? I have a terrible time deciding whether to go with 2 or 3 and have no idea what difference it makes.
Ah I think it was around 3 or 4 for the kneading.
