    The first point is so, so important. People will spend hours marinating a steak but then serve it with mushy boiled broccoli. If you ate unseasoned boiled chicken every night, you'd probably start to think you disliked chicken.

Knowing how to barbecue isn't cooking, you're a one-trick pony who is only useful a handful of days out of the year!)
      That was cruel and I'm half joking, lol. I was raised on unappealing mush for years and thought I just hated vegetables. I’m on the autism spectrum and food textures have been a big hurdle. Once I started cooking my own food and got away from the cooking methods my parents drilled into my head I learned to love veggies a lot.

    • @Rhaifha
      @Rhaifha 3 года назад +225

      Same here. For me as a kid, vegetables came pre-cooked to death in a pot. Add to that my problems with textures due to autism and.. I was not having a good time with vegetables.
      I still have a few vegetables I avoid due to texture (like chickpeas and avocado), but going to university and being exposed to other people's cooking helped a lot! I just need to get better in the planning department.

    • @OGSumo
      @OGSumo 3 года назад +166

      I think this is actually true for a lot of people, even those who don’t struggle with autism. With people’s first foray into veggie, like with trying anything new, you find you might not like some of it, but parents often force their kids to eat it anyway, entirely unable to change or explore other vegetables or methods of cooking. So people grow up just thinking they hate vegetables. But once you can be independent and explore different textures and flavors there is always something for everyone.

      Food texture is it for me too. Funny enough, for me to eat them I prefer them on the mushy side and hidden. For a lot of veggies, I can't _stand_ it when they're crunchy or have a firm texture to them yet hardly any taste. The only one I like normal is corn. Then there's some like avocado and eggplant that are plain disgusting taste-wise.

    Do you have to eat vegetables? Technically no. But it doesn't mean you slam an 8oz steak 3x a day. Muscle meat lacks a bunch of vitamins you need to live. You need to eat a lot of organ meat if cutting veggies is a thing you want. But even then it's still not overly healthy. You won't keel over from vitamin deficiency, but your risk rate for heart disease will be much higher than even a high fat modern diet. That is unless you are very selective about where you get fat from. Lots of people dont wanna eat vegetables but when the alternative is eat small oily fish or blubber, eyeballs, and intestines. Suddenly just learning how to cook an eggplant seems like a much better option.

    I really appreciated the "delicate salads take up lots of room" take. I travel for work (meaning I'm on construction sites and in people's homes during the day), so I don't have a way to heat my lunch, or a convenient place to store large containers. A large salad also takes more time to eat, it seems, maybe because it's not something I can eat while driving, or because I try to skewer a little bit of everything on my fork for every bite. So, all of this adds up to mean that cold cut sandwiches tend to be the easiest thing for me to pack. I can make meat sandwiches the night before instead of the morning of, where as a veggie sandwich would get soggy if I made it the night before (something with hummus and sliced raw veg). BUT. I've been trying to make more veggie-centric main dishes in my lunch, and one of the more recent meals I've been making has been AWESOME. I can't remember where I got the recipe from or how I modified it, but I've been making fried tofu slices, with roasted portabello mushroom and sweet potato (cut on a bias into oval medallions, about as thick as a coin). I put all of this on a bed of cold soba noodles, topped with dipping sauce (I think it's called Tsuyu). I just looked online, and I think the recipe I used was from a website called foodiecrush? The trick for me was getting the sweet potatoes to the right texture. I actually messed them up the first time I made them, intending to use them in another dish, and ended up putting them in this cold noodle dish - SO, the trick is to roast your sweet potato medallions, and then to leave them in the oven after cooking to dry out while the oven cools down. You want them almost leathery, almost like jerky. That way, they soak up some of the noodle dipping sauce and reconstitute, but aren't mushy. They should have some "bite" to them. Anywho, I portion the noodles and veg and tofu and sauce out into 3-cup rectangular glass pyrex containers (the same size labeled as "food prep containers" at Kohl's or whatever).

      @@1997saltydog it really depends on your overall diet and health goals. fruit smoothies, unlike fruit juice, still contain the fiber that fruit would if you just sat down and ate it. that being said, most people couldn't just sit down and eat the amount of fruit they'd put into a fruit smoothie. i think you can make a very well balanced fruit smoothie for most people by simply adding fat and protein to turn it into a complete meal; hemp hearts, seeds, nut butters, and protein powders are all good additions. you can also add greek yogurt but i don't do dairy. that'll make the smoothie more satiating and add additional nutrients.
      if you already eat a lot of fruit throughout the day, a fruit smoothie probably isn't something you should feel like you *have* to drink in order to be healthy, because you're probably already getting the nutrients it'd provide from the fruits themselves. i periodically struggle to include fruits into my diet for various reasons, in which case smoothies are really helpful for me. on the other hand, i basically don't consider something to be a complete meal unless it contains a vegetable, so i personally don't see any reason to put veggies in my smoothies, but if you don't eat a lot of veggies then you should consider adding a handful of spinach to the next smoothie you make.
      other factors to consider are your overall sugar intake. personally, i think that if you're already consuming a lot of sugar then there's probably other sources to cut back on before you start eliminating fruits from your diet. unless specifically advised otherwise by your doctor, you probably should keep eating fruits.

    People who dislike vegetables because they've heard somewhere that they're for "betas" are a juxtapositional enigma to me. You'd think deriving your values and opinions directly from a perceived "alpha" would have them fitting nicely into their definitions of "beta". But what do I know, I've never had elk meat.

    thanks for the crisper advice! spoilage is my #1 anxiety when it comes to fresh produce and i feel like im always racing down the clock. on the upside, it means i do eat more plants when im eating against the clock, but it'd be nice to have more of a buffer. today i had a 12oz bag of spinach staring me in the face so i made a white sauce for creamed spinach. i like it bc it cooks down so easily.

    If anything, I'm from the category of nobody in my family made vegetables appealing, my mother made eating stressful at every turn (complaining I wouldn't try new food, then complaining if I didn't like said new food and making me feel terrible because she bought it) and now I'm 33yo picky-eater/ARFID victim. As much as I wish your options were good for me, I think I'm too chickenshit to try making nice veg for myself.
    But I don't think I'm too chickenshit to B-I-B-A-S-I-D because you remind me, lovingly but without mercy, how much I need to eat them. Thanks IntShaq

    I eat vegetables with every meal but i can’t pretend like they’re not my least favorite part. It’s basically my ‘filler’ so I can enjoy my chicken more and feel more full. So for everyone who feels like me, add veggie noodles to your normal spaghetti noodles to stretch your meals more when meal prepping :)

    I grew up in a "no-thank-you bite" household. There was always a vegetable on the plate. If I didn't want to eat it, fine. I just have to take one "no-thank-you bite" and I wouldn't have to eat the rest. The parameters were simple. It would have to be an honest forkful, and I'd have to chew and swallow. A brief transaction, and then no questions asked. Funny thing is, after three or four meals with that vegetable, sometimes I'd get a taste for the thing.
    The beauty of the paradigm was that even though it required me to try eating a vegetable, it gave me some sense of agency. It was a negotiation. And now there are very few vegetables I don't enjoy.

      I disagree. I think that grocery stores usually pay as much attention to the longevity of their product as they do its appearance. In my experience it really holds true what Shaquille says here, look at how garlic and oranges are sold in nets for example.

      I work produce at a grocery store, longevity is deffo not our #1 priority but thought does go into it. At the end of the day its all about controlling temp and humidity, if you follow the grocery stores blueprint you will be at least a little bit better off.

    What I do is make a big batch of a version of Adam Ragusea's vegetable soup and eat a bowl of that every day. It's great because you can customize it with any vegetables you want (and even pasta/noodles) and you can add things to it as well like a chilli oil and chinese vinegar version or a soy sauce and mirin version. Even adding some miso to jazz things up

      @@inigo137 1. I just use the vegetables he uses normally. You can add potatoes before the carrots and boil them for a while and they'll just disintegrate in your mouth. Sautéing mushrooms and adding them at the end also adds some meatiness, and dumping in canned beans at or near the end (depending on how well cooked they are) pretty much completes the meal.
      2. I'm single so I just dealt with the gas for the first 2-3 weeks but eventually my body adjusted. It would start a couple hours after I ate the soup (10 pm) and last for about 10-12ish hours. You might want to take the pill if you want to be more considerate of others haha

      Idk what kind of food you like, but I would DEFINITELY check out italian and french restaurants if you would prefer veggies that are very hearty, heavy, and well seasoned or venture into the world of Asian food if you prefer a lighter, tropical style of food. Thai and Koreans (if you like spicy anyway) know how to make a veggie their bitch while still celebrating the veg itself. W European cooking tends to use veg as mere background characters for a more complex dish or as a vehicle for a delicious sauce or cheese, Asians veg is more focused on simplicity and making the veg the star of the dish, but either way, both regions do veg REALLY well imo. (IF YOU EVER get the chance, try ratatouillie or eggplant parmesan if you find yourself in a restaurant with real chefs. You'll see what I mean about french and italian veg. ITS LIFE CHANGING)

    thanks shaq, i have had green beans in my fridge that I bought on a whim over a week ago and ive been wanting an easy recipe. These blistered green beans are the bomb (amd really simple) and you guys need to try it.
    1: melt about a tb of butter in a pan over medium high
    2: toss in your beans (recipe says 8oz) , stir to coat with the butter
    3: leave them for about 90 sec until they blister
    4: stir and let blister again
    5: pour in about a tb of soy sauce and stir to coat
    the butter and soy sauce turns really nutty and delicious
