13: How we escape the heat on our Quinta in Central Portugal

  • In today's video we go visit another river beach to escape the heat on our Quinta. We make some Milho Frito to take with, and we also get started on our veranda/patio build.
    Recipe for milho frito
    1 small onion, sliced
    1 carrot, diced or grated
    2 cups shredded cabbage
    2 cloves garlic, chopped
    1 sprig thyme
    1 TBSP pork lard
    1 ½ litres water
    500g corn meal/maize meal
    Olive oil
    In a large pot or pan, bring to heat and add some extra virgin olive oil and pork lard. Once pork lard is melted, add the garlic,thyme, onions and carrot, and saute for a few minutes, until just starting to soften. Add the cabbage and cook for a further few minutes, until starting to soften slightly. Add the water. When water has just started to warm slightly, not too warm, add the corn meal and stir through. On a medium heat, cook the mixture until it becomes thick and creamy, stirring regularly to avoid burning. Once thick and creamy, remove from heat, and place mixture into a large tray, about 2-2½ cm deep, and flatten. Allow to cool overnight. The next day, cut into slices of desired shape and thickness, and fry in a little oil until crispy.
    In hindsight, we could have seasoned the dish a little, or used stock instead of water for a little more of a savoury flavour, but it was still very good 😁.

    Eish, haibo another makhulu bass veg. That's the "hulk" of patti pans. I think that you guys have :giant producing" soil. Just don't plant beans, same might just happen as what happened to Jack 😉🙃😁😁😁 love your projects. Proud of you guys 💙♥️😘

      The hulk of patti pans 😂, it's either a Mexican or an Australian patti pan, Natalia can't remember which one 😂, could do with the golden egg that Jack found at the top of the beanstalk 🤔

    I never had milho frito ,it d not a dish we make where ard from in Portugal!!
    It looks delicious!!I make something similar here but without the cabbage!!
    That river is absolutely beautiful!!

    I am going to try this recipe. I have tried fried cornmeal before, without all the vegetables and it was ok, but I think this will be so much better. Thanks for sharing.

      Please do, let us know how it goes. When we do it again for ourselves, we will use a bit more seasoning, or maybe some stock, just to add a little more flavour😉

    Another great video, after hard work comes good food. Milo frito looks delicious all that is missing is a espetada on the side. Great spot for a picnic by the water falls. Keep up the good work.

    They are so sweet roasted. Bigger does not mean better in veg world.

      We will for sure be doing the roasted option, thanks for the tip. Have heard that there is a "sweet spot" regarding size and flavour in the veggies, we think though that these are a large variety of squash.
